Noble Phở is run by three longtime friends from Austin and Round Rock who love Vietnamese comfort food and warm, welcoming service.
We believe good food is meant to be shared, so our doors are open to everyone. Whether you’re gathering with loved ones for a bánh mì or simply craving a comforting bowl of oxtail phở, you’ll find a welcoming space where you can relax and enjoy the simple joy of a great meal.
Our atmosphere is warm, cozy, and down-to-earth. We want you to feel welcome and the comforting feeling of coming home. At Noble Phở we’re more than a restaurant; we’re a family table where everyone belongs.

Meet the owners
Noble Phở is owned and run by three longtime friends who live in Austin and Round Rock. We opened on November 29, 2025, at 200 University Blvd, Suite 530, in the University Commons center in Round Rock.
Jenna Choe, head chef
Jenna leads the kitchen, from the slow-simmered phở broths to the bánh mì mayo we make in house.
Candice Lui, front of house
Candice owned a café in Georgetown before Noble Phở and looks after every guest who walks through the door.
Eunice Tsang, beverages
Eunice runs our drinks: house-blended milk teas, boba and cà phê sữa đá made with Café du Monde.
Why northern-style phở
Phở began in Hanoi, in northern Vietnam. Northern-style phở has a clear, balanced beef broth that lets the bones and spices come through instead of sweetness, and the fresh basil, lime and bean sprouts come on the side so you can season your own bowl. Most phở in Central Texas is southern-style, which is sweeter. Our signature is the oxtail phở, simmered for 24 hours, and our vegan broth means everyone at the table gets a bowl.
